Easy Coconut Bread Pudding

An easy, tropical bread pudding packed with coconuts and raisins. Perfect dessert for the upcoming holidays that doesn't require much work but is extremly delicious. Bread pudding is usually one of those things I have to feel for. Like out of the blue I get this feeling for some bread pudding. Most times I don't ever have any bread around. Ha. But then sometimes I have so much leftover bread that the only thing it makes sense to make is bread pudding. Bread pudding to me is like baking, but with less work. Like a box cake but better. The base of the pudding is done (the bread) and for this, we add some coconut flakes, and raisins and well-seasoned milk that makes this a deliciously, high tropical delight.

Caribbean Seafood Soup

A delicious soup packed with crab, shrimp, mussels, scallops and dumplings. Ram packed with flavor, this soup is the perfect supper for a hungry crowd. This Caribbean seafood soup is ram packed with flavor and as much seafood that you can think of. Smooth, creamy, and spicy it makes a great soup for a weeknight dinner.

Sticky BBQ Jerk Chicken

This BBQ chicken is sticky and spicy and tender and the perfect option for a weeknight dinner It's mid-week already!! I'm a little excited and a little apprehensive. Yay for the weekend being almost here, but how many more weeks do we have before the end of the year? 11 weeks or so? Time is flying. In the midst of everything though, I think dinner is that time we need to take to sit down to eat something and something good. This sticky BBQ chicken is something good. It's "stick to your fingers" good, with a kick of jerk seasoning that is so worth the little burn. I can assure you that you will still be licking your fingers while chomping through this deliciousness.

Jamaican Rice and Peas

The must have side with any Sunday lunch, is this easy rice and peas Jamaican style. A quintessential Jamaican dish. I know that the most popular item when people think of Jamaican food, they think of jerk. Running a close second in my opinion is rice and peas. This is a "must have" when it comes to Jamaican food. This side is the perfect accompaniment to their jerk chicken, curry chicken and even curry goat. It is an authentic Jamaican dish. This is not your normal rice and peas (even though kidney beans are used it's still referred to as rice and peas). This is a fully flavored rice with coconut milk and a little hint of pepper. You can't have Sunday dinner and not have yuh rice and peas.

Caribbean Pumpkin Punch

I think you should just go ahead and call me punch 'man. This week I have been downing punch after punch after punch. I have just been so lazy to cook. And a punch can fill you for hours. Well ok probably just like an hour. They are packed filled with so much nutritional value that you don't feel too bad slurping it down. And then they just also taste so amazing. This pumpkin punch follows the same process as the beet punch . Delicious and easy.

Delicious Beet Punch

A quick and easy beet root drink that is not only delicious but nutritious. Finally I can get back to some blogging. Hiii everyone. What a week I had. First we had to make some quick movements as Hurricane Matthew was heading our way. It quickly went from "this is not really an issue" to "we definitely need to get ourselves in order". Fortunately for us, we were spared any damage at all. I am so thankful. Then it was straight into Miami Carnival for us here. After all that rushing, running, anxiety and then mas activities I definitely needed a pick me up. And this beet punch is the ideal thing to pump me up. Made with raw beet and sweetened, this punch provides a stamina boost, assists in lowering blood pressure (I have been stressed) and is great for detoxifying. And did I mention that it was easy?

Tomato Choka with Grilled Cheese

A roasted tomato dish with a deep flavor that can easily be eaten during any meal. Sometimes there's a dish that you just all of a sudden feel for and you decide you just must make it. It doesn't happen often, but when that urge strikes it's to just get it made. That was me with this tomato choka this week. I ignored the first urge when it passed but the second time, when I actually felt like I was smelling it in my kitchen, I had to get it done. I was having too many signs. Roasted tomatoes, with onions, garlic and pepper emits a deep smell that makes you just want to gobble through it so quickly. And I did just that.
