Stewed Oxtails with Calypso Rice

This dish is an all-time Caribbean favorite. The method of cooking it varies from island to island, like most dishes, with each island's having a slightly different taste, but at the end of the day, it's all stewed oxtails to me.. oh so yummy.


Do you realize that I call things backward?

For example, we say curry chicken but then there's chicken curry. This recipe is stewed oxtail, but then there's oxtail stew. I guess tomato TOH MAH TO huh?

Anyway, I probably have said this for the majority of my recipes, but I really do love this dish.

Let me tell you some more about oxtail.

This thing is expensive. Getting oxtail for dinner meant special occasion. Or even buying it now at Caribbean restaurants it's one of the most expensive meals.

This meat is the tail of cattle. It used to be only used from an ox or from a steer. Is that the reason it's so expensive? I dunno.

Oxtail needs to be cooked for a few hours. So if you want this in a hurry, then not an option. Well then you need to go buy it from a restaurant. The meat is a fatty type of meat (I get my butcher to take off as much excess fat that they can with the saw) and even with a pressure cooker, it still requires some slow cooking time.

I mentioned that there are various ways to cook oxtails. There's the Jamaican version and there's the Trini version. There's honestly not that much of a difference other than Jamaicans usually braise their meet first and Trini's "stew" it with browning before.

Then it's all about leaving it to take it's time to cook in it's juices, spices and seasonings till tender and falling off the bone.

This dish packs a lot of flavor with the bay leaves, all spice and thyme. We usually pair this with some simple rice and then you must make sure to have some sweet plantains on the side either boiled or fried.

And then there's usually silence as everyone dives in.

Because this is slowed cooked all the flavor is absorbed into the bones of the meat and is just as cherished to be eaten as the meat is.

Stewed oxtails are a little piece of heaven.



Stewed Oxtails

Prep Time: 15 minutes
Cook Time: 4 hours

Ingredients (Serves 4)
  • 2 lbs oxtail
  • 1 tbsp oil
  • 11/2 tbsp brown sugar
  • 2 tbsp green seasoning
  • 2 large carrots, sliced
  • 2 sprigs thyme
  • 2 bay leaves
  • salt and pepper to taste
  • 4 All spice
  • 2 tbsp ketchup
  • 3 cups (or more) water
Instructions
Wash oxtail and drain water
Season oxtail with green seasoning (if you do not have green seasoning, season with salt and pepper) set aside
Wash and clean carrots and cut into discs
Heat heavy pan on med-high heat
Add oil and let heat through
Sprinkle sugar over bottom of pan
Leave to heat through until rolling boil and sugar is melted and brown (NOT black)
Add oxtails to pan and stir, covering oxtail with browning
Leave to cook until liquid is absorbed
Add water to pot to cover oxtails
Add bay leaf, all spice and thyme
Cover and cook on med heat for 2 hours
Keep an eye on oxtail to ensure that water is not totally absorbed.
Add water to cover oxtails and add ketchup and carrots. Combine.
Test for taste (add salt, pepper if needed)
Cover and cook for another hour.
Test for tenderness of oxtail. If more time is needed add water and cover and cook and check every 30 minutes
