I love drinking juices. LOVE! If there is juice I am going to drink it. One thing about Caribbean people is that we would make juice out of anything. I mean if it can be put in a processor it would be made into juice, or attempted to be made into juice.
I have tried so many different juices: beet, cucumber, ginger, pumpkin. Today though I'm bringing you an easy and refreshing carrot juice, that is extremely popular in Jamaica.
But you will be surprised how refreshing this drink is and how much you just would want to drink it all at one time.. and don't share.
All this drink requires is a blender, or a food processor like I used. And this can easily be adjusted to your own taste.
Chopped carrots, a piece of ginger and water into your processor. Then add water to cover the carrots about 2 inches
And blend till fine. The mix shouldn't be too thick.. there should be enough liquid to strain out of the carrot mix
Then strain using a strainer or cheesecloth to get all the liquid out
Now this is where you adjust to taste using condensed milk, nutmeg and lime juice.
I just threw the carrot juice, my milk and nutmeg back into my processor and blended. Sweetening to taste. I then squeeze my lime juice into the mix and I'm ready to go.
I prefer to have this drink chilled rather than over ice.
I also like to top it off with a hint of cinnamon.. for no reason other than I just love to use cinnamon. Ha!!
Oh, you can also add rum to this to be an adult drink. Don't worry, with vegetables in it's still healthy. I think..
Easy Carrot Juice

Ingredients (Serves 3)
- 8 carrots, peeled
- 1/2 can condensed milk (or any other milk)
- 1/2 tsp nutmeg
- 1 tbsp grated ginger (or a nob of ginger)
- Sugar (if using not using an already sweetened milk
- 1/2 lime
Chop carrots up for blending
Add enough water to cover carrots 2 inches above
Blend till fine
Strain carrot mixture
Add milk, nutmeg and lime juice
Sweeten to taste
If using unsweetened milk, add sugar to taste prior to chilling
Ginger can be reduced or increased according to taste.
If you want a juice drink have more carrot juice than milk.
If you prefer a milkier drink add more water when blending carrots
**You can up the ante by adding rum to this drink**
