Ginger Pineapple Lemonade

It's that time, when we need to start to grab the extra sunscreen and pump the AC ALLLLL the way up. OMG, this weekend the weather in South Florida was ridiculous. It was 93 degrees at 11am!! Can you imagine what it felt like at 1pm? Hoooooot!!

This drink saves lives, and I can assure when that heat hits you where you are, you are definitely going to grab this amazingly refreshing lemonade and be very happy you did.

We  have a mix of ginger syrup with pineapple juice and lemon and lime juice and it was the FIRST drink every member of my family devoured in less than an hour AND it had NO alcohol. Like the heat we are getting, this is record breaking!!

I think it's officially summer. And me thinks Florida is in for a dooozy.

I can't really put into words how refreshing this drink is. It truly hits the spot. Mixing fresh lime and lemon juice with pineapple juice is enough on a hot day. Then adding ginger syrup to the mix?

And besides the refreshing taste of it, this lemonade has so much benefits.

Ginger is great for digestive systems. Pineapple not only has vitamin C but copper, beta carotene and B6 to name a few.

My mom was extremely happy to get her hands on a glass of this since she was coming down with a cold and her throat was feeling itchy. And since she thinks ginger is a cure all, she drank this down easily.

I used unsweetened pineapple juice, but you can easily use a fresh pineapple instead. Time was not on my side to cut and juice a pine, but fresh is amazing, especially when you get some pulp in the drink. The only thing you may need to do is see how sweet that pineapple is, you can add more seltzer to the mix if you need to dilute it.

So go ahead and mix up a batch of this lemonade. And let me know if your family breaks our record of drinking this out in less than an hour.

And don't be afraid to add some rum to the mix. But don't tell my mom I said to do that!!

Ginger Pineapple Lemonade

A refreshing lemonade made of ginger syrup, lime, pineapple and lemon juice. A mix of sweet and sour and a little tangy.


For Ginger Syrup
  • 1 1/2 cups water
  • 1 cup sugar
  • 1 cup thinly sliced fresh unpeeled ginger
For Punch
  • 3 cups unsweetened pineapple juice, chilled
  • 2 cups sparkling water, lemon flavored (chilled)
  • 1/4 cup fresh lemon juice (usually about 2 large lemons)
  • 1/4 cup fresh lime juice (about 3 - 4 limes)


For Ginger Syrup
  1. In a heavy pan bring sugar, water, and ginger to a boil, stirring until sugar is dissolved
  2. Simmer mix for about 10 minutes, stirring off and on
  3. Steep mixture off of heat for about 20 minutes
  4. Strain syrup into a bowl, discarding the ginger
  5. Chill covered until cold for about 2 hours.
To Make Punch
  1. Mix juices together, add sparkling water and ginger syrup.
  2. Serve over ice.
