As much as food is important in the Caribbean, drinks are running a close second.

We have a collection of staple drinks like peanut punch, rum punch, hot cocoa, Guinness punch, sorrel and then there’s mauby. A classic drink found on many a table during Sunday dinner. It's reputation is though, you like it our you HATE it.

Do you have a drink that your parents made that you just absolutely refused to drink as a child? Mauby was that for me. It has a very very distinct flavor and somewhat of a bitter aftertaste.

And that aftertaste I  tell you. Depending on how it's made, can make you spin. Haha That was the main reason I emphatically told my mother "No thanks" when she made it. It is PUNGENT. Some people brew this drinks so that it has an extremely strong aftertaste. I rather it to be milder.

This drink is the result of boiling the bark of a mauby tree with additional spices. You then get a bitter concentrate that you dilute and sweeten to your liking.

Besides the strong aftertaste, mauby is extremely refreshing. It is known to provide health benefits that include:
        • Lowering cholesterol levels
        • Aiding in alleviating arthritic pain
        • Having a high vitamin and mineral content
The process of making this drink is pretty easy. It requires you boiling, leaving the bark and spices to seep for a few hours (or even overnight), strain and store.

Once the concentrate is done, take how much you want of the concentrate and dilute it and sweeten it to your liking. Bitter or not so bitter.

The concentrate can be stored in the fridge for up to about 3 months, allowing you to make a glass of this whenever you feel like it.

Mauby Drink

A good old fashioned refreshing Caribbean drink made from the bark of a mauby tree. This recipe makes concentrate that can be used over time to make the drink

Mauby Concentrate
  1. Wash mauby bark, getting rid of any stones or debris that may have been missed in packaging.
  2. Add mauby, cinnamon and aniseed to pot
  3. Add water to pot about 1 inch above level of mauby barks
  4. Bring to a boil and turn off
  5. Leave to steep for 3 hours or can be left overnight.
  6. Cool, strain and pour mixture into an airtight bottle (can be stored in fridge)
To Make Mauby Drink
  1. 1/2 cup of concentrate
  2. Add 3 - 4 cups water to get the taste level that you want
  3. Add mixed essence
  4. Add sugar to taste
  5. You can also add a little lime juice and a few dashes of angostura bitters
