In the Caribbean one of the most popular breakfast items is porridge.
What is Porridge?
Porridge is basically a grain boiled in milk or water. It can be made with numerous grains.Cornmeal is one of the popular grains used. People also use green banana and oatmeal as options.
Here's an "easy as pie" oatmeal porridge that can sustain you till lunch and is full of flavor.
When we were growing up I loved waiting on my mom to finish make the porridge simmer on the pot. The smell of all the spices was enough to make me excited.
My sister on the other hand not so much. She insisted she was not a bear so she was not having any porridge. More for me!!
There isn't much you need for porridge. Milk, grain, your sweetener, and some spices.
Tips for making the best cornmeal porridge
The trick to making sure your porridge is not lumpy is to make sure to mix the cornmeal with some water prior to putting it on the stove.Making it into a paste helps the cornmeal to start swelling while the water boils and makes it easier to mix
You add your milks and sweeten to your liking.
Some people like their porridge thick.
Some people like their porridge solid.
And some people like their porridge thin.
To get the texture that you want, you add milk as needed.
A little at a time.
Then you dive in, one spoon at a time.
Each slurp full of cornmeal
Complete it with some fruits and a cup of homemade chocolate tea.

Easy Cornmeal Poridge
A Caribbean breakfast staple made from cornmeal, boiled in milk and spices
Prep time: 5 MCook time: 20 MTotal time: 25 M
Ingredients:
- 1/2 cup cornmeal
- 2 plus 1/2 cup water (divided)
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 2 bay leaves
- 1/2 tsp salt
- 1/4 cup milk
- 1/2 cup condensed milk
Instructions:
- Add 1/2 cup water to cornmeal in a bowl. Mix together and crush any lumps
- Add 2 cups of water to boil
- Add cinnamon, nutmeg, bay leaf and salt
- Add cornmeal mix and lower stove to simmer
- Mix well, removing lumps
- Add milk and condensed milk
- Simmer till warmed through
- Serve
