Spicy Tuna Salad and my new toy

It has been so hot here in Florida already that turning the stove on is blasphemous. I have no desire to stand over a stove with any heat. So my tuna salad was a good option for dinner. Tuna salad is extremely easy to make and you do not have to be stuck eating it just one way.
Ingredients for a tuna salad are pretty basic. Most of these are everyday pantry items.
And the good thing about it is that the method is basically a "chop and mix" method.
Onion, corn, and scallions:
Then I add my drained and chipped tuna
Mayo
Dijon mustard
After mixing those together and ensuring they were incorporated, I added the remaining ingredients. Apples, raisins, red pepper flakes, lime juice, salt and pepper to taste. Your salad is done.
Now how do you eat it?
I also tested out my new light. I do a lot of my cooking late in the night. Before I even started blogging I cooked late. At 11 pm and I'm trying to decide what I want to cook for dinner. I got the Lowel EGO Digital Imaging, Tabletop Fluorescent Light Unit

Here is a side by side. I guess I can see the difference, but I am not overly impressed. I may need to practice with it more.

Spicy Tuna Salad

Ingredients
- 2 cans (6 oz each) tuna in water, drained
- 1/2 cup red onions, chopped
- 1/3 cup red apple, chopped
- 2 scallions, chopped
- 1 tsp lime juice
- Red pepper flakes
- 1/3 cup + 2 tbs mayo
- 2 tbsp Dijon mustard
- 1 tsp pepper sauce
- 2 tbsp raisins
- 1/2 cup whole corn
Instructions
Mix red onions, corn, scallions together
Add tuna and incorporate
Add mayonnaise, pepper sauce, and mustard and mix
Add salt and pepper to taste
Add 2 shakes of red pepper flakes
Mix in apples and raisins
Serve
