Coconut Shrimp with Spicy Mango Chutney

I am not a fan of eating coconut shrimp when I go out. It's usually oily or the batter is dry, or the shrimp is non existent. To save myself the continuous disappointment I stopped ordering it out. Over the weekend the supermarket had sweetened coconut flakes on sale and I decided to try to make my appetizer nemesis myself.

SandBar Grille - Sun Tower Hotel and Suites

In 90+ degree weather I decided to brave the heat and head out to brunch on Sunday. It was H O T, so drinks and food were extremely needed. Well more drinks and we surely got that at SandBar Grille. SandBar Grille is located inside Sun Tower Hotel and Suite s on Ft. Lauderdale Beach. It is a beach side restaurant with a oceanfront terrace view of the Atlantic Ocean. The establishment offers a casual menu of breakfast, lunch and dinner and various alcoholic and non alcoholic drinks.

Not everyone has a grill, not all the time do you want to pull out a big grill to do some chicken and sometimes it's just raining. Well today I am going to show you how I do my jerk chicken on my stove top and get the same results.

Caribbean Green Seasoning

A mix of blended herbs and spices, great for meats and soups. One of the most important parts of cooking is how you season your food. You can have an amazing dish prepared but having meat that is not properly seasoned can make a big difference to how your meal tastes. For some people salt and pepper are more than enough but coming from where I come from (The Caribbean) we just think we need more than just those two things.
