Recipe: Sugar Cookies with some surprises

I love sugar cookies. I remember them being one of the first things I made in my mother's kitchen as a teen because they are very easy to make. Sugar cookies just require mixing and some spooning onto a baking sheet. One weekend I decided to make these white chocolate chip cookies with cherries and cranberries after not doing much baking for a while.


2.5 cups of all purpose flour
1 tsp baking soda
1 tsp sea salt
1 teaspoon vanilla extract
2 cups packed brown sugar (I used less for the diabetic in my house)
2 eggs
2 sticks of butter, softened
1 bag white chocolate chips (I used half bag)
1/2 cup roughly chopped cashews
1/2 cup dried cherries (I used cranberries that I had left over in my pantry)


1. Whisk together the flour, baking soda and salt. Set aside.

2. Cream together the butter and sugar. Add the eggs one at a time, beating after each one. Add the vanilla and mix gently to combine.

3. Add flour to the butter and mix. Carefully stir in the white chocolate chips, cashews and cherries/cranberries.

4. Bake at 350 for about twelve minutes or until golden.

As you can see this yields a lot. Especially for my small household. I gave more than half to my friend's kids who loved them because they are SWEET! The cranberries and cashews gives it a nice tart versus sweet taste.

The next time I try these I will have to half the recipe and I would make it oatmeal based.
