Oxtail Macaroni and Cheese

A non-traditional twist to the traditional dinner option of a gooey macaroni and cheese, infused with the earthy flavor of slow cooked oxtails.

This mac and cheese recipe is not your traditional mac and cheese.

It's creamy, gooey and tasty yes, but it's also packed with one of my favorite meats: oxtails. Making this a double whammy favorite.

If you are looking for a new version of your regular macaroni and cheese dish, this is the one to try.


One night I ventured out to dinner and had the most delicious mac and cheese with lamb that was so amazing and suddenly I wanted to infuse my macaroni and cheese with any and everything.

What did I come up with? Tahdaaaa... Oxtails. Because what other meat competes with lamb?

I know cooking oxtail can be daunting to some people, but cooking this the long way is so worth it when it's time to eat. The earthy taste of the oxtail really pairs well with the cheese.

How to make oxtail macaroni and cheese

The most difficult process of this dish is getting the oxtails cooked. It can take sometimes 3 hours (on the regular stove top) because of the texture. A hint to make this a little easier is to cook the meat the night before, I also personally think that "stale" oxtail tastes a little better. Cook, remove meat from bones and store in fridge till you are ready (next day).

Or you can also use your instant pot if you have one. I would braize the meat on the stovetop first, then dump everything into the instant pot and set it to "meat".




The macaroni and cheese base is not just your regular pasta with cheese, this is a white sauce based combination that gives a good base to hold all the flavors. We gotta make the mac and cheese a little fancy. White sauce, a roux, or a bechamel is pretty easy to make.

What I also love about it, is that it's pretty good to freeze. Making this a great make-ahead dinner option.

Oxtail Macaroni and Cheese

A new alternative to one of our favorite comfort foods. A cheesy macaroni and cheese infused with the earthy flavor of slow cooked oxtails.

INGREDIENTS:

For Oxtails
For White Sauce
  • 4 tablespoons flour
  • 5 tablespoons butter
  • 3 cups milk
  • 1/4 teaspoon nutmeg
  • 1 1/2 teaspoons salt
  • 1 pack of grated cheese (gruyere or swiss is best but any of your preference)
For Pasta
  • 3/4 lb uncooked elbow pasta (3/4 of a 16 oz box)
  • Breadcrumbs (optional)

INSTRUCTIONS

For Oxtails
  1. Heat pan on medium heat
  2. Add coconut oil to hot pan
  3. When oil is heated add oxtail to pot in single layer
  4. Braise one side until darkened
  5. Flip pieces
  6. Add bay leaf, thyme, tomato paste and rest of stock
  7. Cover and let cook for 2.5 to 3 hours (until meat is tender and falling off bones) May need to add water occasionally until meat is done.
  8. Take meat off of bones and discard bones. Set aside
    Can be done overnight or a few days ahead. (If done make sure to cool and refrigerate)X
For White Sauce
  1. Heat milk in a pan until just before boil (small bubbles would start to show), set aside
  2. In a separate large pan heat butter till melted
  3. Add flour and beat until smooth
  4. Continue mixing for about 6 minutes till mixture is a light brown
  5. Add enough heated milk to flour mixture to cover it and mix till smooth (almost like mashed potatoes)
  6. Continue adding milk to mixture some at a time until smooth (may not use all the milk)
  7. Add 1 cup cheese (Can add more or less to your liking)
  8. Bring mixture to a low boil
  9. Add nutmeg and salt
  10. Stir continuously for 10 minutes
  11. Remove from heat and set aside
Build Mac and Cheese
  1. Boil pasta according to package instructions for "al dente"
  2. Heat oven to 350 degrees
  3. Grease 8-inch baking dish
  4. Add pasta to dish with white sauce and mix
  5. Add cooked oxtails to pasta and sauce and mix
  6. Cover with rest of cheese and breadcrumbs
  7. Bake for 25 - 30 minutes
  8. Remove from oven and cool for 5 minutes
