A zesty, slow cooked chicken in a jerk marinade sandwiched in a french roll.
I was not ready for this. I don't think you would be too. The burst of flavors from a bite of this one sandwich is going to make you do a dance. (I surely did). There's something about bbq sauce, laced with some spicy jerk then topped with some sweet chutney that confuses the mind and then makes you do a happy dance.
And what's the best thing about this?
It's done in the slow cooker.

This is spicy. (and can be adjusted to less if you wish) But it worked well paired with the sweetness of the chutney and the bbq sauce.
Can I tell you that the ONLY bbq sauce I use is Sweet Baby Ray's? If you are still using those other brands THROW IT OUT!! NOW!! It has such a deep intense flavor, I don't need to add more spices to it when I use it.
Then you set it and walk away.
Or if you are like me check the slow cooker every 20 minutes. What's up with that? I am too much of a pot checker. I must walk over to the pot and take a peep even though I know it will take 3 hours. Isn't the reason of a slow cooker so that I don't have to check? Smh... please let me brain know this.
If you don't have some pineapple chutney in the fridge in a bottle eating some of it every day with a spoon, then now would be a good time to make this chutney up. Please don't skip it!! It doesn't take very long at all.
Now all we need to do, once everything is done, is layer up.Can you sense my excitement?
Stop picking pieces of meat from the pot.
Slap on some meat on a french roll, with sauce. I like using a french roll for this since it holds up well to weight. It's also a bit crunchy on the outside and soft on the inside. A kaiser roll would be good too, but I felt it was a bit too large.
Then add on some dollops of chutney
Grab a bib, and maybe some milk, because you know, it maybe too hot but you still going to eat through the spiciness.
And take a bite.

Pulled Jerk Chicken Sandwich
An amazing combination of sweet, savory and spicy in a pulled chicken slow cooked in a jerk marinade and served with a sweet pineapple chutney.
prep time: 10 MINScook time: 3 hour and 30 MINStotal time: 3 hours and 40 mins
- 1 lb chicken breast
- 1/4 cup chopped onion
- 1 1/2 tbsp jerk paste
- 4 french rolls
- Pineapple Chutney
- 3/4 cup bbq sauce (I always use Sweet Baby Ray's Bbq Sauce)
- 1 tbsp Worchestire sauce
- 1 tbsp Worcestershire sauce
- 1/4 cup brown sugar
- 2 tbsp jerk paste
- Wash chicken breast
- Add onions
- Season with 1 1/2 tbsp jerk paste and set aside for at least an hour
- Mix ingredients for sauce together in a bowl
- Add chicken to slow cooker
- Add sauce and stir
- Cover and cook on high for 3.5 hours (or until chicken is done)
- Remove breasts from pot and strip up
- Add stripped chicken back to crockpot for 10 minutes to resoak in the sauces
- Layer french roll with chicken and pineapple chutney
