Growing up there are a few dishes that you expect to eat on a Sunday in Trinidad. Macaroni pie is one of them. It is the yummiest, cheesiest pie that you would ever taste. It is the mature version of mac and cheese. 

What I loved about this pie was the cheese.

In Trinidad we always use “Trini cheese” or what is called vegetarian cheese. The creamiest, cheesiest cheese. I love it so much that I usually make my best friend send me a few frozen blocks whenever I have someone coming up. I freeze and use block by block..

Once macaroni pie is being made, someone needs to grab the grater and start the shredding. I would usually volunteer because who is going to pass up the opportunity to grab a little end of this fresh cheese and eat away.

This recipe is a two part process. Well, three if you count the boiling of the pasta. But it’s pretty easily a mix and bake process.

Make a mix of the “wet” ingredients.


Mix it with your “dry” ingredient. You would realize I did not use macaroni itself. Though it was the type of pasta popularly used, ziti (or any othe type of pasta infact) can replace macaroni.

Bake it to a cheesy, pie goodness.

There is hardly any leftovers with macaroni pie. It can be eaten alone or with stewed chicken and calallo and some fried plantains,

Trinidad Macaroni Pie

Prep Time: 15 minutes`
Cook Time: 40 minutes

Ingredients (Serves 4)
  • 1 pack of macaroni (16 oz)
  • 2 1/2 cups of milk
  • 2 eggs
  • 2 tbs butter
  • 2 cups grated cheese
  • 1/2 tsp black pepper
  • 1 - 2 tsp salt
  • 2 tbs mustard
  • 1 tbs paprika
Instructions
Heat oven to 350
Whip eggs
Add milk, mustard, paprika, black pepper, garlic powder and incorporate
Boil pasta according to packet instructions till al-dente (max 8 minutes)
Drain pasta and return to pot it was boiled in
Add butter and mix
Pour egg mixture to pasta and mix
Add most of the cheese (about 1 1/2 cups) and mix
Add to greased pie dish (about
Sprinkle with remaining cheese
Bake for 35 - 40 minutes
Test by inserting knife into pie and if it comes out clean, it's done.
Leave to cool for about 10 minutes.
Or if you rather a more "mac and cheese" consistency over a pie slice, leave to cool for 5 minutes.
