A new variation to an old comfort food of twice baked potatoes topped with jerk chicken
Christmas dinners were not the same if we did not have twice baked potatoes. I think that was the major thing I looked forward to at that time. Diving into some re-stuffed stuffed potatoes with gooey cheese was absolute joy.
I thought my mom was an angel the first time she made this for us. How did you come up with such a genius idea to make potatoes the best thing ever. Then I grew up and realized that everybody makes these potatoes... Ha! Don't you just hate when you think you're the first inventor but you're really just the late comer??
I know everyone has their own way of making their twice baked potatoes. After eating these for years, because my sister and I insisted on getting them done EVERY year, I needed to add some variety and not loose this item from our menu.
And boy did this take this to another level. This would make a perfect side or even a meal by itself.
The inclusion of the chicken doesn't make this dish any harder or any longer. While the potatoes are baking, quickly saute the chicken on the stove so that when the potatoes are done it's all ready to go.
I know everyone makes their mashed potatoes in different ways. And really I usually make mine "blindly". Add a bit more butter if it's too stiff, sometimes I add some sour creme, sometimes I add a little milk. This part can easily be adjusted to your liking.
Then dive in to warm gooey goodness with bites of spicy jerk chicken mixed in.
There's no way we will be removing this item from our Christmas dinner anytime soon. And I think we are surely also adding it to our Thanksgiving menu.
What's great about this is that this can be made ahead and stored in the freezer and warmed up when needed. Make ahead wins!!
Twice Baked Potatoes with Jerk Chicken

Ingredients (Serves 6)
- 4 baking potatoes
- 1/2 cup grated cheese
- Garlic powder
- Black pepper
- 1/2 large chicken breast, cut into bite sized pieces
- 1/2 tsp jerk seasoning
- 2 tbsp butter
Heat oven to 400 degrees
Spray a baking tray
Wash and dry potatoes
Put potatoes to bake for 1 hour to 1 1/4 hours
Season chicken with jerk seasoning and let sit till potatoes are half way done
Saute chicken until cooked through and set aside
Take potatoes out and cut lengthwise
Dip out insides of each half, making sure to get as much potato out into a bowl but not breaking the skin
Add butter, cheese, salt, pepper and garlic powder to potato and mash together until combined
Re stuff potatoes with filling (you may lose using 2 shells)
Add pieces of cubed chicken to top of filling,
Sprinkle with left over cheese
Return to oven and bake until cheese is melted
