An easy side of potatoes seasoned with a citrus blend of dressing
It's potluck time here since it's the holidays. My job is planning there's for Friday and I am sure other people's are spread out throughout the end of the year. This dish is a great option for a potluck. It's an easy combination of potatoes coated in a citrus blend of dressing.
But can I mention that I am in total shock that the year is almost over already. Wasn't it just May last week?? Where did the year go already
Anyway back to this easy side dish that is another great option and eliminates the use of mayonnaise.
This dish is good because it can be made beforehand and stored in the fridge.
I really do like eating it cold too. It gives the potatoes time to sit in the dressing.
This is an easy side to make for dinner time. This is extremely easy, and can definitely be used by parents to have your kids get involved in the process of getting food ready for holiday meals. You will need to assist them in the cutting up segment.
Four potatoes yield a lot. I usually think of one potato per person when making this salad. So you can easily adjust the amounts depending on how many people you plan to feed.
How do you boil your potatoes?
Do you boil potatoes then cube them up? Or do you cube your potatoes then boil them?
I cube then boil but have to be very careful of my boiling time to ensure it does not get crushed up when tossing. If you boil and then cube then you can be a bit more absent minded about boiling time but need to be extremely careful when cutting up since potatoes are HOT.
Potatoes are then seasoned with a light dressing giving your potatoes a refreshing flavor. Yum. Great to be paired with any of your savory meats you've had planned for your menu. I love having this with my stewed chicken. It's a nice pairing with this savory meat.

Lebanese Potato Salad
Prep Time: 30 minutes
Cook Time: 20 minutes

Ingredients (Serves 6)
- 1/2 cup chopped parsley
- 1/4 cup lemon juice
- 1 clove garlic
- 2 tbsps olive oil
- 1 clove garlic, pressed
- 1 lb potatoes
- Salt and Pepper to taste
Fill a deep dish pot with water and set to boil
Add salt as needed
Wash, peel and cube potatoes
Put cubes to boil till tender
Drain potatoes and set to side to cool for a little
Combine lime juice, parsley, olive oil, garlic and black pepper
Combine mixture with potatoes and stir delicately
Can be covered and chilled and served the next day
