Going through High School, one of my classmates made these religiously. It was the most amazing thing to me. The commercial version of cheese balls had nothing on these homemade goodness.
With everything at room temperature, it's all about mixing your ingredients together.
I leave my mix to sit for about 10 minutes before I proceed to form into balls. This just gives it a little time to firm up a little more.
Then I start the process of making into balls. Form into about 1" balls and place on a lined baking sheet. You want to make cheese straws? Roll out the mixture to about an inch thick and slice into strips instead
Then your army of cheese balls is ready to go into the oven.
Now to try to leave them to cool enough to not get burnt eating them...but that doesn't always work
You get a little bit of heat, a lot a bit of cheese which means a lot of picking up and quick popping in your mouth.
Spicy Cheese Balls

Ingredients (45 balls)
- 1/2 lb extra-sharp cheddar cheese, grated
- 4 tablespoons margarine, room temperature
- 1/4 tsp Paprika
- 1 cup flour
- Cayenne pepper
Heat oven to 400 degrees
Mix cheese and margarine together
Add a dash of cayenne pepper
Add paprika and flour
Leave mixture to sit for 20 minutes
Form into 1" balls and place on lined baking sheet
Bake for 20 minutes
Remove from oven and enjoy
