I get this meal done in about ten minutes tops. A few chops, chops here, some smashes here and voila. Place and eat. I love these for days when I work from home and don't want to spend too much time in the kitchen
I found these stand-up shells at Publix and I loved them. I'm always fighting with my tacos to hold my stuffing and not topple over. For chickpeas that are easy to roll, these stand up taco shells work great. Heating the taco shells up in the oven for 5 minutes gives it a great crunch.
Making the chickpeas took all of five minutes with the seasoning that comes with the shells. Or even better if you have your own taco seasoning stored on hand. Once the chickpeas are evenly seasoned and warmed through you are done cooking. All of five minutes.
Avocado mash is just that. A mashed hass avocado seasoned with garlic powder, black pepper and salt. I think this mash is really the star of the taco. Oh so tasty
As much as I love spending time in the kitchen creating and putting extra effort into spices and blends, sometimes a quick meal is warranted. This is a great alternative for meat lovers and for vegetarians.
One can of chickpeas can make 3 full tacos. If you are like me and only really eat two tacos and don't want to just eat the rest of the chickpeas like I did, you can pop the rest of the chickpeas in the oven to dry it out for about 45 mins and have a seasoned chickpeas snack.
I dare you to try these tacos and say that you miss having meat in your taco. They are just amazing!!
Chickpeas Tacos with Avocado Mash

Ingredients (3 tacos)
- 1 can of chickpeas (garbanzo peas)
- 1 medium tomato chopped
- 1/2 a small onion chopped 1 tbsp Taco seasoning (half a pack from a pre-packaged mix)
- Hass avocado
- Black pepper and salt to taste
- Garlic powder to taste
- 2 taco shells
- 1/2 tablespoon oil
Drain and rinse chickpeas
Heat pan and add oil
Add onion to pan and stir until opaque
Add taco seasoning to mix and stir
Add chickpeas ensuring that it is coated and cook until the peas are warmed through.
Peel avocado, remove seed and place in bowl
Add salt, pepper and garlic powder to taste
Mash until desired consistency
Place taco shells in oven for 5 minutes to warm up
