I am going to confess now that I do not eat bananas plain. I can't stomach it. So 90% of the time I actually buy bananas so that they can spoil. Or get very close to it. Using dark bananas in breads or for fritters gives it this really great flavor, and it's great to fry.
So the next time you have those bananas there and they are turning black, DO NOT THROW THEM OUT.
This recipe is easy and quick. If you have kids you can easily include them up to the frying part. An adult would have to do that part for safety reasons. The bananas are extremely soft so mashing is extremely easy.
To bananas add flour
Add baking powder
And brown sugar
Add some cinnamon. A lot if you are like me and love cinnamon, and mix.
I have seen these fritters in many forms. When I first saw my friend making them she made them into little pancakes, about the size of your hand palm. We also make them into balls, and deep fry them.
And in less than five minutes you are eating some banana goodness. Sprinkle with some powdered sugar and additional cinnamon. Hey I said I love cinnamon.
Yummy moist on the inside, firm on the outside goodness.
These do not last around me at all. Three bananas usually make about 12 fritters and it is usually done in less time it takes to make this. Yummy

Ingredients (Approx. 12 fritters)
- 3 over ripe bananas
- 1 cup of all purpose flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1/4 cup brown sugar
- Oil for frying
Peel and add bananas to bowl
Add all other ingredients except for oil
Fry balls of mixture until brown on both sides and cooked through
Sprinkle batch with powdered sugar and cinnamon
