Jerk Chicken Pizza

So we were first able to make our jerk chicken on our stove. Now here is a great option for a meal with the chicken. Majority of the times I do make jerk chicken inside I actually just make it to be used for other dishes. One of those things is my jerk chicken pizza.

This pizza is quick because I use pre - made dough. And everything else is pretty handy and just requires chopping. I love the amazing combination of flavors on this pizza. From savory, to spicy to sweet all blending in your mouth with one bite.

As I mentioned that I am trying to do quick meals since I am swamped with work so pre-made has been the way for me. You can use any pre-made dough you want. I have even used naan bread for this on occasion.

This flat bread was a bit soft and white so I actually put it in the oven for about 5 minutes before I topped it for it to get a little crispy

The toppings I love to use for this pizza are red onions, banana peppers, sweet peppers (bell peppers), tomatoes and scallions. Pineapple is also a great addition for the sweet.

Once everything is chopped up it becomes extremely easy after that. We are just going to layer everything but the scallion, on top of our pizza dough that has been smeared with pesto and put to bake for another five minutes (or until cheese is melted)

And then this goodness happens

There is no sharing here. I suggest making one per person with this flat bread. With the jerk chicken the pesto instead of pizza sauce is a real winner as the jerk and the basil flavor just makes it Ah Maz Ing.

Ingredients
  • Pre-made pizza dough for one (can also use naan bread)
  • 2 tbl spoons pesto
  • 1 tomato chopped
  • 1/2 large yellow bell pepper (chopped)
  • 2 stalks green scallion leaf (sliced)
  • 1/4 large red onion chopped
  • 1/4 cup banana peppers
  • 1/2 cup grated Parmesan cheese
  • Jerk chicken(chunked)
  • 1/4 cup pineapple chunks (optional)
Instructions
Bake dough for 5 minutes in 425 preheated oven
Chop toppings
After dough is toasted, spread pesto
Layer toppings
Cover with cheese
Bake for 4 minutes or until cheese is melted
Sprinkle with scallion
