This also includes making sure that my kitchen is stocked. I always like to ensure that my kitchen has things because I have this habit of wanting to make stuff at odd hours of the night and that means I can't always run out to the store to get an ingredient that may be missing.
As I thought about it there are certain things I always make sure that I have on hand. Things that I generally feel all pantries should have in stuck, regardless of if you are a 5 star chef or a homemadezagat.
Here's a list of what I think a pantry needs:
Basil, Cilantro, Green onions, Mint, Oregano, Parsley, Rosemary, Sage, Tarragon, Thyme (I store all of these in the refrigerator)
Dairy & Substitutes:Almond milk, Coconut Milk, Cheeses, Buttermilk (I usually make this as I need it from scratch using whole milk and lemon), Evaporated milk, Fresh eggs, Greek yogurt, Heavy whipping cream, Half & half, Whole milk.
Sugars & Salts:
Granulated cane sugar, Brown sugar, Agave nectar, Maple syrup, Honey, Confectioner's sugar, Kosher salt, Sea salts, Baking powder, Baking soda, Active Active dry yeast, Agave nectar, All-purpose flour, Baking powder, Baking soda, Brown sugar, Cake flour, Cocoa powder, Confectioner's sugar, Corn starch, Gelatin, Granulated cane sugar, Honey, Instant coffee, Kosher salt, Sea salts, Maple syrup, Pure vanilla extract, Yellow cornmeal.
Oils, Vinegars & Wines
Balsamic vinegar, Coconut oil, Extra-virgin olive oil, Grape seed oil, Marsala cooking wine, Mirin, Non-stick cooking spray, Red table wine, Seasoned rice wine vinegar, Sesame oil, Shortening, Apple cider vinegar, Various infused olive oils, White wine vinegar.
Nuts & Grains
Jasmine brown & white rice, Noodles, Panko bread crumbs, Peanut butter, Quick oats, Raw almonds, Raw cashews, Raw peanuts, Rice noodles, Rice paper, Sesame seeds, Tahini paste, Various dried pastas.
Stocks, Tomatoes, Citrus:
Beef stock, Canned tomatoes (whole, crushed, diced), Chicken stock, Dried chili peppers, Fresh ginger, Fresh ginger paste, Fresh lemons, Fresh limes, Fresh tomatoes, Fresh whole garlic, Minced garlic, Pre made marinara sauce, Red onions, Seafood stock, Sweet onions, Tomato paste, Tomato puree, Vegetable stock.

Sheesh!!. With all of these you are ready to go and don't have to worry that "you need to make a run to the store". Well only to replenish.
I have a spreadsheet of my list that I select as things run out so that I know I have to replenish on my next store visit.
