Mango Chow Recipe

What I love about summer? Fruits fruits galore. What I love about being home in Trinidad and Tobago for a few days? Fresh fruits galore. I especially love mangoes when I am home. I especially am a huge fan of a mango we call "Big Beef". Is that the correct name for it, I highly doubt it but no one else can give me another name for it.



Big beef mango is a mango with a lot of flesh on the inside, hence it's name. I love it half ripe (between ripe and green) or ripe. I especially like it as a snack we call chow.

Chow is basically a snack with about 4 ingredients and any fruit that is in season. So we have mango chow, cherry chow, chennette chow, plum chow, pineapple chow... and the list goes on. This is a quick and very easy and tasty snack.


Chow is basically, cut every thing up and add it to the bowl and mix and mix. Riper mangoes give it a sweeter taste (which I like) but I know many others rather the mango be on the greener side. Some people also add hot pepper (I do not like spicy).

But chow is that snack you can make it to your liking. Adding additional flavors as needed.

Mango Chow

Ingredients
  • 1 med - large Half Ripe Mango
  • 1 Flavor Pepper
  • 3 Stalks Green Onion
  • 2 Pinches Salt
  • 2 Pinches Black Pepper
  • 1 Hot Pepper (optional)
Cooking Directions
  1. Cut mango up into pieces
  2. Slice other ingredients up
  3. Add to bowl and mix
  4. Add salt and black pepper to taste.
